Deep in the darkness, amidst the heat of summer and the chill of winter, toil the unsung heroes of distilleries around the world. They are the cellarmen: they care for the whisky as it ages. Far removed from the production floor and the politics of the salesmen, they hide away a few select barrels that they sneak a taste of when no one is looking.
