What do VS, VSOP and XO mean on cognac?

They show minimum aging. VS is aged at least 2 years, VSOP at least 4 years, and XO at least 10 years in oak.

What is the difference between cognac and brandy?

Cognac is a brandy made from grapes in the Cognac region of France, double distilled in copper pot stills and aged in French oak. Brandy is the broader category.

How should cognac be served?

Older cognacs (VSOP and XO) are best neat in a tulip glass at room temperature. VS cognac is great in cocktails such as the Sidecar.
