Empire Rye, our expression of New York’s native spirit, is made from rye and barley from our own and neighboring Hudson Valley Farms. We floor-malt the barley, wild ferment in open wood tanks, and distill in direct-fired copper pot stills. A range of techniques we call Heritage Method.
